🍍 Sweet and Sour Pork

Ingredients
- 0.5 kg Pork loin or pork belly, cubed
- 1 pc Egg, beaten
- 0.5 cup Cornstarch
- 2 cup Oil for deep frying
- 1 cup Pineapple chunks (fresh or canned, juice reserved)
- 1 pc Red bell pepper, cubed
- 1 pc Green bell pepper, cubed
- 1 pc Onion, cubed
- 0.5 cup Vinegar
- 0.5 cup Sugar
- 0.25 cup Ketchup
- 0.5 cup Pineapple juice (from can) or water
- 2 tbsp Soy sauce
- 2 tbsp Cornstarch mixed with 3 tbsp water (slurry)
- 2 tbsp Cooking oil (for sauce)
Instructions
- Season pork cubes with a little salt and pepper, dip in beaten egg, then dredge in cornstarch to coat.
- Heat oil in a pot and deep-fry the pork cubes until golden brown and cooked through, about 6-8 minutes. Drain and set aside.
- In a separate pan, heat 2 tbsp oil and sauté onion until translucent.
- Add bell peppers and pineapple chunks, and stir-fry briefly.
- In a bowl, mix vinegar, sugar, ketchup, pineapple juice, and soy sauce, then pour into the pan.
- Bring the sauce to a simmer, then stir in the cornstarch slurry to thicken.
- Add the fried pork cubes to the sauce and toss to coat evenly, cooking for 2-3 minutes.
- Serve immediately with steamed rice.
