  1. Boil pork ears or belly in water with bay leaf and salt for 30-40 minutes until tender. Drain and let cool.
  2. Grill the boiled pork over charcoal until lightly charred and slightly crisp on the edges, about 5-7 minutes per side.
  3. Chop the grilled pork into small, thin pieces.
  4. In a bowl, combine vinegar, onion, garlic, ginger, chili, sugar, salt, and pepper.
  5. Add the chopped grilled pork to the vinegar mixture and toss well to coat.
  6. Let it marinate for 10-15 minutes at room temperature to allow flavors to meld.
  7. Finish with a squeeze of calamansi juice and adjust seasoning to taste.
  8. Serve as an appetizer (pulutan) with cold drinks.
