Ingredients
- 0.5 kg Pork ears or pork belly, cleaned
- 1 pc Bay leaf
- 1 tsp Salt
- 0.5 cup Vinegar
- 1 pc Large onion, finely chopped
- 4 cloves Garlic, minced
- 2.5 pcs Siling labuyo, chopped
- 1 thumb Ginger, minced
- 1 tsp Sugar
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 2 pcs Calamansi juice, to taste
Instructions
- Boil pork ears or belly in water with bay leaf and salt for 30-40 minutes until tender. Drain and let cool.
- Grill the boiled pork over charcoal until lightly charred and slightly crisp on the edges, about 5-7 minutes per side.
- Chop the grilled pork into small, thin pieces.
- In a bowl, combine vinegar, onion, garlic, ginger, chili, sugar, salt, and pepper.
- Add the chopped grilled pork to the vinegar mixture and toss well to coat.
- Let it marinate for 10-15 minutes at room temperature to allow flavors to meld.
- Finish with a squeeze of calamansi juice and adjust seasoning to taste.
- Serve as an appetizer (pulutan) with cold drinks.
