🍤 Pork Binagoongan

Ingredients
- 1 kg Pork belly, cubed
- 3 tbsp Cooking oil
- 1 pc Onion, chopped
- 6 cloves Garlic, minced
- 2 pc Medium tomatoes, chopped
- 4 tbsp Shrimp paste (bagoong alamang)
- 0.5 cup Vinegar
- 2.5 pcs Siling labuyo, chopped
- 1 tbsp Brown sugar
- 0.5 tsp Pepper to taste
- 1 pc Red bell pepper, sliced (optional)
Instructions
- Boil pork belly in water for 30-35 minutes until tender but still firm. Drain and set aside, reserving 1/2 cup of the broth.
- Heat oil in a pan and pan-fry the boiled pork until golden and slightly crisp on the edges. Set aside.
- In the same pan, sauté garlic, onion, and tomatoes until softened.
- Add the shrimp paste and cook for 2-3 minutes to remove the raw smell.
- Return the fried pork to the pan, add vinegar, and let it simmer uncovered for 3 minutes without stirring.
- Pour in the reserved broth and water, then add sugar, chili, and pepper. Simmer for 10-15 minutes until sauce thickens.
- Add bell pepper (if using) and cook for another 2-3 minutes.
- Serve hot with steamed rice.
