Ingredients
- 1.2 kg Pork leg (pata), cut into chunks
- 0.75 cup Vinegar
- 0.5 cup Soy sauce
- 0.5 cup Brown sugar
- 6 cloves Garlic, crushed
- 2 pc Bay leaves
- 1 tsp Whole peppercorns
- 0.25 cup Dried banana blossoms or saging na saba (optional)
- 2.5 pcs Dried bay leaves
- 0.25 cup Wood ear mushrooms (tenga ng daga), soaked (optional)
- 3 pinch Salt to taste
Instructions
- In a large pot, combine pork leg, water, garlic, bay leaves, and peppercorns. Bring to a boil, skimming off scum.
- Lower heat and simmer, covered, for 1-1.5 hours until pork is tender.
- Add vinegar and let simmer uncovered for 5 minutes without stirring.
- Stir in soy sauce and brown sugar, then continue to simmer, covered, for 20-30 minutes until the sauce reduces and thickens.
- Add mushrooms or banana blossoms if using, and simmer for another 10 minutes.
- Adjust sweetness, saltiness, and sourness to taste.
- Serve hot with steamed rice.
