Ingredients
- 0.5 kg Pork face/pig ears or pork belly, boiled until tender
- 0.25 kg Chicken liver, boiled (optional, for richness)
- 1 tbsp Cooking oil
- 1 pc Onion, finely chopped, divided
- 4 cloves Garlic, minced
- 4 pcs Siling labuyo, chopped
- 3 tbsp Mayonnaise
- 3 tbsp Soy sauce
- 4.5 pcs Calamansi, juiced
- 1 pc Egg (optional, for topping)
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 1 tbsp Butter or oil for the sizzling pan
Instructions
- Boil pork face/ears (or belly) with salt, peppercorns, and bay leaf for 45-60 minutes until tender. Drain and let cool.
- Grill the boiled pork over charcoal or pan-sear until the skin is charred and crispy, about 8-10 minutes per side.
- Finely chop the grilled pork and boiled liver into small bits.
- Heat oil in a pan and sauté half the onion and garlic until fragrant.
- Add the chopped pork and liver, and stir-fry for 3-5 minutes.
- Season with soy sauce, calamansi juice, chopped chili, salt, and pepper. Mix well.
- Transfer to a sizzling plate greased with butter, top with remaining raw chopped onion and a raw egg cracked on top (optional).
- Stir in the mayonnaise once served, or serve it on the side, and mix well while sizzling. Serve immediately with rice.
