Ingredients
- 1 kg Pork shoulder or pork belly, sliced thin
- 0.5 cup Brown sugar
- 0.25 cup Pineapple juice
- 3 tbsp Soy sauce
- 6 cloves 1 tbsp garlic powder or 6 cloves garlic, minced
- 1 tsp Salt
- 0.5 tsp Curing salt (optional, for pink color and preservation)
- 0.25 tsp Ground black pepper
- 2 tbsp Cooking oil
Instructions
- In a bowl, combine brown sugar, pineapple juice, soy sauce, garlic, salt, curing salt (if using), and pepper.
- Add the sliced pork and mix thoroughly to coat evenly.
- Cover and marinate in the refrigerator for at least 8 hours, or up to 3 days for best flavor development.
- In a pan, combine the marinated pork with water and cook over medium heat, covered, for 10 minutes to cook through.
- Uncover and continue cooking, adding oil, until the water evaporates and the pork begins to caramelize.
- Fry the pork in its own rendered fat and oil for 5-8 minutes, turning occasionally, until browned and slightly sticky-glazed.
- Serve hot with garlic fried rice and a fried egg (tosilog).
