Ingredients
- 1 kg 1 kg pork shoulder (kasim) or pork belly, cut into cubes
- 3 pc 3 medium tomatoes, chopped
- 1 cup 1 cup tomato sauce
- 1 pc 1 small onion, sliced
- 4 clove 4 cloves garlic, minced
- 1 thumb 1 thumb ginger, sliced (optional)
- 2 tbsp 2 tbsp cooking oil
- 1 tbsp 1 tbsp fish sauce (patis), or to taste
- 0.25 tsp 1/4 tsp ground black pepper
- 2 pc 2 medium potatoes, cubed (optional)
- 1 pc 1 bell pepper, sliced (optional)
- 3 pinch Salt, to taste
Instructions
- Heat oil in a pot over medium heat. Saute garlic, onion, and ginger until fragrant and softened.
- Add the pork and cook, stirring occasionally, until lightly browned on all sides.
- Add the chopped tomatoes and cook, mashing slightly, until they break down into a light sauce.
- Stir in the tomato sauce and water. Bring to a boil, then lower heat and simmer, covered, for 40 to 45 minutes, until the pork is tender.
- Add the potatoes, if using, and cook for 10 minutes until nearly tender.
- Add the bell pepper, if using, and season with fish sauce, pepper, and salt to taste. Simmer for another 5 minutes.
- Serve hot with steamed rice.
