  1. In a large bowl, combine ground pork, brown sugar, soy sauce, vinegar, garlic, paprika, salt, and pepper. Mix thoroughly.
  2. Cover and marinate in the refrigerator for at least 4 hours, or overnight for best flavor.
  3. If using casings, stuff the mixture into the casings and twist into links. If not, shape the mixture into small logs (about 3 inches long) using plastic wrap or foil to help form the shape, then chill for 1 hour to firm up.
  4. Heat a small amount of oil in a pan over medium heat.
  5. Pan-fry the longganisa, turning occasionally, for 10-12 minutes until fully cooked through and caramelized on the outside.
  6. Serve hot with garlic fried rice and a fried egg (longsilog).
