Ingredients
- 1 kg Ground pork (with some fat)
- 0.5 cup Brown sugar
- 0.25 cup Soy sauce
- 2 tbsp Vinegar
- 8 cloves Garlic, minced
- 1 tsp Paprika (for color, optional)
- 1 tsp Salt
- 0.5 tsp Ground black pepper
- 2 tbsp Cooking oil for frying
Instructions
- In a large bowl, combine ground pork, brown sugar, soy sauce, vinegar, garlic, paprika, salt, and pepper. Mix thoroughly.
- Cover and marinate in the refrigerator for at least 4 hours, or overnight for best flavor.
- If using casings, stuff the mixture into the casings and twist into links. If not, shape the mixture into small logs (about 3 inches long) using plastic wrap or foil to help form the shape, then chill for 1 hour to firm up.
- Heat a small amount of oil in a pan over medium heat.
- Pan-fry the longganisa, turning occasionally, for 10-12 minutes until fully cooked through and caramelized on the outside.
- Serve hot with garlic fried rice and a fried egg (longsilog).
