🧅 Pork Steak (Bistek na Baboy)

Ingredients
- 1 kg Pork chops or pork sirloin, sliced 1/2-inch thick
- 0.5 cup Soy sauce
- 0.25 cup Calamansi juice (or lemon juice)
- 1 tsp Ground black pepper
- 4 cloves Garlic, minced
- 2 pc Large onions, sliced into rings
- 3 tbsp Cooking oil
- 1 tsp Sugar (optional)
Instructions
- In a bowl, marinate pork chops in soy sauce, calamansi juice, pepper, and half the garlic for at least 30 minutes.
- Remove pork from marinade, reserving the liquid.
- Heat oil in a pan over medium-high heat and sear pork chops on both sides until browned, about 3-4 minutes per side. Set aside.
- In the same pan, sauté remaining garlic until golden, then add half the onion rings and sauté briefly.
- Pour in the reserved marinade and water, bring to a boil, and return the pork chops to the pan.
- Lower heat, cover, and simmer for 15-20 minutes until pork is tender and sauce slightly reduces.
- Add sugar if using and adjust seasoning. Add remaining raw onion rings on top just before removing from heat, letting them soften slightly in the residual heat.
- Serve hot with steamed rice.
