๐ Pork Hamonado

Ingredients
- 1 kg 1 kg pork shoulder (kasim) or pork belly, cut into 2-inch cubes
- 2 cup 2 cups pineapple chunks, with juice reserved
- 0.5 cup 1/2 cup soy sauce
- 5 tbsp 5 tbsp brown sugar
- 4 clove 4 cloves garlic, crushed
- 1 pc 1 small onion, sliced
- 3 pc 3 bay leaves
- 1 tsp 1 tsp whole peppercorns, cracked
- 2 tbsp 2 tbsp cooking oil
- 3 pinch Salt, to taste
Instructions
- In a bowl, marinate the pork in soy sauce, garlic, and peppercorns for at least 30 minutes, or up to overnight in the refrigerator.
- Heat oil in a pot over medium heat. Sear the pork in batches, reserving the marinade, until browned on all sides.
- Add the onion and bay leaves, and cook until the onion softens.
- Pour in the reserved marinade, the pineapple juice, and water. Bring to a boil, then lower heat and simmer, covered, for 40 to 45 minutes, until the pork is tender.
- Stir in the brown sugar and pineapple chunks. Simmer uncovered for 10 more minutes, until the sauce reduces and thickens slightly.
- Season with salt to taste, if needed. Serve hot with steamed rice.
