Ingredients
- 0.5 kg Pork shoulder, cubed
- 0.25 kg Pork liver, cubed
- 3 tbsp Cooking oil
- 4 cloves Garlic, minced
- 1 pc Onion, chopped
- 2 pc Medium tomatoes, chopped
- 0.5 cup Tomato sauce
- 2 pc Medium potatoes, cubed
- 1 pc Carrot, cubed
- 0.25 cup Raisins
- 0.5 cup Red bell pepper, cubed
- 2 pcs Dried bay leaves
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 2 tbsp Fish sauce or soy sauce
Instructions
- Heat oil in a pot over medium heat. Sauté garlic and onion until fragrant.
- Add the pork shoulder and cook until lightly browned on all sides.
- Add tomatoes and cook until softened, then stir in tomato sauce and bay leaves.
- Pour in water or broth, bring to a boil, then lower heat, cover, and simmer for 30 minutes until pork is tender.
- Add potatoes and carrots, and simmer for 8-10 minutes until nearly tender.
- Add the pork liver and bell pepper, and cook for another 5-7 minutes (do not overcook liver to avoid a grainy texture).
- Stir in raisins and season with fish sauce or soy sauce, salt, and pepper to taste.
- Simmer for a final 3-5 minutes until sauce thickens slightly, then serve hot with rice.
