Ingredients
- 1 kg Pork belly, whole slab
- 10 cloves 1 head garlic, smashed
- 2 pc Bay leaves
- 1 tbsp Whole peppercorns
- 2 tbsp Salt
- 2 cup Cooking oil for deep frying
Instructions
- In a large pot, combine pork belly, water, garlic, bay leaves, peppercorns, and salt. Bring to a boil, then simmer for 45-60 minutes until pork is fork-tender.
- Remove pork from the pot and let it cool, then pat completely dry with paper towels.
- Place pork on a tray, uncovered, and refrigerate for at least 1 hour (or overnight) to dry out the skin further for extra crispiness.
- Heat oil in a deep pot to 350°F (175°C).
- Carefully lower the pork belly into the hot oil and deep-fry, turning occasionally, for 12-15 minutes until the skin is golden, blistered, and crispy.
- Remove and drain on a wire rack or paper towels. Let rest for 5 minutes.
- Chop into serving pieces and serve with liver sauce or spiced vinegar for dipping.
