🍢 Chicken Teriyaki

Ingredients
- 1 kg Chicken thigh fillets
- 0.5 cup Soy sauce
- 0.25 cup Brown sugar
- 2 tbsp Calamansi or lemon juice
- 4 cloves Garlic, minced
- 1 tsp Grated ginger
- 1 tbsp Sesame oil
- 2 tbsp Cooking oil
- 1 tbsp Cornstarch mixed with 2 tbsp water
Instructions
- In a bowl, combine soy sauce, brown sugar, calamansi juice, garlic, ginger, and sesame oil to make the marinade.
- Add chicken and marinate for at least 30 minutes, reserving the marinade.
- Heat cooking oil in a pan over medium heat and sear chicken fillets, skin side down first, for 4-5 minutes per side until browned and cooked through.
- Remove chicken and set aside; pour the reserved marinade into the pan and bring to a boil.
- Stir in the cornstarch slurry and cook until the sauce thickens into a glaze.
- Return chicken to the pan and toss to coat evenly in the glaze, simmering for 2-3 minutes.
- Slice chicken if desired, garnish with sesame seeds and spring onions, and serve hot with steamed rice.
