Ingredients
- 1 kg Chicken, cut into serving pieces
- 2 tbsp Cooking oil
- 1 pc Onion, chopped
- 5 cloves Garlic, minced
- 2 thumbs Ginger, julienned
- 2 cups Coconut milk
- 1 cup Coconut cream
- 2.5 pcs Green chili (siling haba)
- 2 cups Chili leaves (dahon ng sili) or malunggay leaves
- 2 tbsp Fish sauce
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a pot and sauté ginger, onion, and garlic until fragrant and aromatic.
- Add chicken pieces and cook until lightly browned.
- Pour in coconut milk and fish sauce; bring to a boil, then lower heat and simmer covered for 20-25 minutes until chicken is tender.
- Add green chili and coconut cream, and simmer uncovered for 8-10 minutes, stirring occasionally, until sauce thickens and oil begins to surface.
- Add chili leaves and cook for 1-2 minutes until just wilted.
- Season with salt and pepper to taste and serve hot with rice.
