Ingredients
- 4 cups Cooked white rice (freshly steamed)
- 1 pc Onion, chopped
- 4 cloves Garlic, minced
- 1 thumb Ginger, minced
- 2 tbsp Soy sauce
- 1 tsp Turmeric powder or achuete powder (for color, optional)
- 2 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Boil chicken thigh fillets in water with a little salt until fully cooked, about 20 minutes; remove, shred finely, and reserve the broth.
- Heat oil in a pan and sauté onion, garlic, and ginger until fragrant.
- Add shredded chicken, soy sauce, turmeric powder, salt, and pepper, and a few tablespoons of reserved broth; cook, stirring, for 8-10 minutes until the chicken is dry-sautéed and well seasoned.
- Prepare the banana leaves by passing them briefly over an open flame to make them pliable.
- Lay a portion of hot steamed rice onto a banana leaf square.
- Top the rice with a generous portion of the sautéed shredded chicken.
- Fold the banana leaf over the rice and chicken to wrap into a neat packet.
- Serve warm, unwrapped at the table, traditionally eaten by hand.
