🍳 Chicken Sisig

Ingredients
- 1 kg Chicken (thighs and/or chicken livers), boiled and grilled
- 1 pc Onion, finely chopped
- 3.5 pcs Green and red chili (siling labuyo), chopped
- 4 cloves Garlic, minced
- 3 tbsp Calamansi juice
- 2 tbsp Soy sauce
- 3 tbsp Mayonnaise
- 2 tbsp Butter
- 1 pc Raw egg (optional, for topping)
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 1 tbsp Cooking oil
Instructions
- Boil chicken in water with a little salt until cooked, about 20 minutes; drain and pat dry.
- Grill the boiled chicken over charcoal or pan-sear until skin is browned and slightly charred.
- Once cool enough to handle, chop the chicken (and liver, if using) finely into small bits.
- Heat oil and butter in a pan; sauté garlic and onion until fragrant.
- Add chopped chicken and stir-fry for 3-5 minutes.
- Season with soy sauce, calamansi juice, salt, and pepper; add chopped chili and mix well.
- Stir in mayonnaise until well incorporated and creamy.
- Transfer to a sizzling plate, crack a raw egg on top if desired, and serve immediately while sizzling, with calamansi on the side.
