Ingredients
- 1 kg Chicken breast or thigh, cubed
- 1 pc Egg, beaten
- 0.5 cup Cornstarch
- 0.25 cup All-purpose flour
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 2 cup Cooking oil, for deep frying
- 1 pc Onion, cut into chunks
- 1 pc Red bell pepper, cut into chunks
- 1 pc Green bell pepper, cut into chunks
- 1 cup Pineapple chunks
- 0.5 cup Ketchup
- 0.25 cup White vinegar
- 0.25 cup Sugar
- 0.5 cup Pineapple juice
- 1 tbsp Soy sauce
- 1 tbsp Cornstarch mixed with 2 tbsp water
Instructions
- Season chicken cubes with salt and pepper, then coat in beaten egg followed by a mixture of cornstarch and flour.
- Heat oil and deep-fry chicken cubes for 6-8 minutes until golden and cooked through; drain on paper towels.
- In a separate pan, combine ketchup, vinegar, sugar, pineapple juice, and soy sauce; bring to a simmer.
- Add onion and bell peppers, and cook for 2-3 minutes until slightly softened.
- Add pineapple chunks and stir in the cornstarch slurry, cooking until the sauce thickens.
- Add the fried chicken to the sauce and toss to coat evenly.
- Serve immediately while hot with steamed rice.
