Ingredients
- 1 kg Chicken thigh fillets, cubed
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 4 cloves Garlic, minced
- 1 tsp Salt
- 2 tbsp Cooking oil
- 1 cup Ground roasted peanuts
- 2.5 pcs Dried red chili, or 1 tbsp chili powder
- 1 pc Onion, minced
- 3 cloves Garlic, minced (for sauce)
- 1 tbsp Brown sugar
- 3 pinch Salt to taste
Instructions
- Marinate chicken cubes with turmeric, cumin, coriander, garlic, salt, and oil for at least 1 hour.
- Thread marinated chicken onto soaked bamboo skewers.
- Grill skewers over medium heat, turning occasionally, for 12-15 minutes until cooked through and lightly charred.
- Meanwhile, make the sauce: sauté minced onion and garlic in a little oil until fragrant.
- Add chicken broth, ground peanuts, dried chili, and brown sugar; simmer, stirring, for 10-15 minutes until thickened into a spicy peanut sauce.
- Season sauce with salt to taste.
- Traditionally served with rice cakes (puso) or steamed rice, with the hot peanut-chili sauce ladled generously over the grilled skewers.
