🍛 Chicken Curry

Ingredients
- 1 kg Chicken, cut into serving pieces
- 3 tbsp Cooking oil
- 1 pc Onion, sliced
- 4 cloves Garlic, minced
- 1 thumb Ginger, julienned
- 2 tbsp Curry powder
- 2 cups Coconut milk
- 2 pc Medium potatoes, cubed
- 1 pc Carrot, sliced
- 1 pc Red bell pepper, sliced
- 2.5 pcs Dried bay leaf
- 2 tbsp Fish sauce
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 1.5 pcs Red chili (optional, for heat)
Instructions
- Season chicken with salt and pepper.
- Heat oil in a pot; sauté onion, garlic, and ginger until fragrant.
- Add chicken and cook until lightly browned on all sides.
- Stir in curry powder and cook for 1 minute until fragrant.
- Add water or broth and bay leaf, bring to a boil, then simmer covered for 15-20 minutes.
- Pour in coconut milk and stir well; simmer for another 10 minutes.
- Add potatoes and carrots, cook until nearly tender, about 10 minutes.
- Add bell pepper and chili, and fish sauce; simmer for 5 more minutes until sauce thickens slightly.
- Adjust seasoning with salt and pepper, and serve hot with steamed rice.
