🍅 Chicken Afritada

Ingredients
- 1 kg Chicken, cut into serving pieces
- 3 tbsp Cooking oil
- 1 pc Onion, sliced
- 4 cloves Garlic, minced
- 2 pc Large tomatoes, chopped (or 1 cup tomato sauce)
- 2 pc Medium potatoes, cubed
- 1 pc Large carrot, sliced
- 1 pc Red bell pepper, sliced
- 0.5 cup Green peas
- 2 tbsp Fish sauce (patis)
- 1 pc Bay leaf
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat oil in a pot and fry potatoes and carrots briefly until lightly golden; remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Add chicken pieces and cook until lightly browned.
- Add tomatoes and cook, mashing, until softened into a sauce, or stir in tomato sauce.
- Pour in water or broth and bay leaf, bring to a boil, then simmer covered for 20-25 minutes until chicken is tender.
- Add fried potatoes, carrots, and fish sauce; simmer for 5 minutes.
- Add bell pepper and green peas, and cook for another 3-5 minutes.
- Season with salt and pepper to taste and serve hot with rice.
