Ingredients
- 1 kg Chicken, cut into serving pieces
- 0.3333 cup Soy sauce
- 0.25 cup White or cane vinegar
- 10 cloves 1 head garlic, crushed
- 1 pc Bay leaf
- 1 tsp Whole peppercorns, crushed
- 2 cups Coconut milk
- 2 tbsp Cooking oil
- 1.5 pcs Green chili (siling haba), optional
- 3 pinch Salt to taste
Instructions
- Marinate chicken in soy sauce, garlic, bay leaf, and peppercorns for at least 30 minutes.
- Heat oil in a pot and sear the marinated chicken (reserving marinade) until lightly browned.
- Pour in the reserved marinade and bring to a boil.
- Add vinegar, bring back to a boil without stirring, then simmer uncovered for 5 minutes.
- Lower heat, cover, and simmer for 15-20 minutes until chicken is nearly tender.
- Pour in coconut milk and stir well; simmer uncovered, stirring occasionally, for 15-20 minutes until sauce thickens and oil starts to render.
- Add green chili during the last 5 minutes for extra flavor and heat.
- Season with salt to taste and serve hot with rice.
