Ingredients
- 0.5 kg Pork lungs, boiled and finely chopped
- 0.25 kg Pork heart, boiled and finely chopped
- 3 tbsp Cooking oil
- 1 pc Onion, chopped
- 6 cloves Garlic, minced
- 2 pc Medium tomatoes, chopped
- 0.25 cup Vinegar
- 3.5 pcs Siling labuyo, chopped
- 1 pc Red bell pepper, chopped
- 1 tbsp Annatto (achuete) powder or oil, for color
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 2 tbsp Fish sauce
Instructions
- Boil pork lungs and heart in water for 30-40 minutes until fully cooked and tender. Drain and let cool.
- Finely chop or pulse the boiled lungs and heart in a food processor until minced.
- Heat oil in a pan and sauté garlic and onion until fragrant.
- Add tomatoes and cook until softened.
- Add the minced lungs and heart, and stir-fry for 5-7 minutes.
- Stir in vinegar and let simmer uncovered for 3 minutes without stirring.
- Add annatto for color, chili, and bell pepper, and season with fish sauce, salt, and pepper.
- Simmer for another 8-10 minutes until the mixture is dry and well-seasoned. Serve hot as a pulutan or side dish with rice.
