Ingredients
- 0.5 kg Pork belly, sliced thin
- 2 tbsp Cooking oil
- 1 pc Onion, chopped
- 5 cloves Garlic, minced
- 1 thumb Ginger, minced
- 2 cups Coconut milk
- 1 cup Coconut cream (kakang gata)
- 6.5 pcs Siling labuyo (bird's eye chili), sliced (adjust to taste)
- 3 pcs Long green chili (siling pangsigang), sliced
- 3 tbsp Shrimp paste (bagoong alamang)
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant.
- Add the pork belly and cook until lightly browned and rendering fat, about 5-7 minutes.
- Stir in the shrimp paste and cook for 2 minutes.
- Pour in the coconut milk, bring to a simmer, cover, and cook for 20-25 minutes until pork is tender and sauce reduces.
- Add the green chilies and siling labuyo, and simmer for 5 minutes.
- Pour in the coconut cream and simmer uncovered for another 8-10 minutes until the sauce thickens and turns oily on top.
- Season with salt and pepper to taste, adjusting spice level with more chili if desired.
- Serve hot with steamed rice.
