Ingredients
- 1.2 kg Pork leg (pata), whole or halved
- 0.5 cup Soy sauce
- 0.25 cup Oyster sauce
- 0.3333 cup Brown sugar
- 4 cloves Garlic, crushed
- 3 pcs Star anise
- 1 thumb Ginger, sliced
- 2 pcs Dried shiitake mushrooms, soaked and sliced
- 4 pcs Bok choy or pechay, blanched
- 2 tbsp Cornstarch mixed with 3 tbsp water (slurry)
- 2 tbsp Cooking oil
Instructions
- Blanch pork leg in boiling water for 5 minutes to remove impurities, then drain and rinse.
- Heat oil in a large pot and sauté garlic and ginger until fragrant.
- Add the pork leg and sear lightly on all sides.
- Pour in water, soy sauce, oyster sauce, brown sugar, and star anise. Bring to a boil, then lower heat, cover, and simmer for 1.5-2 hours until pork is very tender, turning occasionally.
- Add shiitake mushrooms during the last 20 minutes of cooking.
- Once tender, remove pork and keep warm. Strain and return the sauce to the pot, then bring to a simmer.
- Stir in the cornstarch slurry to thicken the sauce.
- Pour the thickened sauce over the pork leg, arrange blanched bok choy around it, and serve hot with steamed rice.
