  1. In a pot, combine pork, soy sauce, vinegar, water, crushed garlic, bay leaves, and peppercorns. Bring to a boil, then simmer covered for 40-45 minutes until pork is tender.
  2. Uncover and continue simmering until most of the liquid evaporates, leaving the pork coated in a thick sauce. Let cool slightly.
  3. Using two forks, shred the pork into fine flakes.
  4. Heat oil in a pan and sauté the minced garlic until golden and crispy; remove and set aside for garnish.
  5. In the same oil, add the shredded pork in a single layer and pan-fry over medium-high heat, stirring occasionally, for 8-10 minutes until crispy and browned in spots.
  6. Season with additional salt and pepper to taste if needed.
  7. Top with the crispy fried garlic bits before serving.
  8. Serve hot with garlic fried rice and a fried egg.
