Ingredients
- 1 kg Pork belly or pork shoulder, cubed
- 0.5 cup Soy sauce
- 0.3333 cup Vinegar
- 6 cloves Garlic, crushed, plus 4 cloves minced (for frying)
- 2 pc Bay leaves
- 1 tsp Whole peppercorns
- 3 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- In a pot, combine pork, soy sauce, vinegar, water, crushed garlic, bay leaves, and peppercorns. Bring to a boil, then simmer covered for 40-45 minutes until pork is tender.
- Uncover and continue simmering until most of the liquid evaporates, leaving the pork coated in a thick sauce. Let cool slightly.
- Using two forks, shred the pork into fine flakes.
- Heat oil in a pan and sauté the minced garlic until golden and crispy; remove and set aside for garnish.
- In the same oil, add the shredded pork in a single layer and pan-fry over medium-high heat, stirring occasionally, for 8-10 minutes until crispy and browned in spots.
- Season with additional salt and pepper to taste if needed.
- Top with the crispy fried garlic bits before serving.
- Serve hot with garlic fried rice and a fried egg.
