Ingredients
- 200 g 200g kamote (sweet potato), cubed
- 1 pc 1 small onion, sliced
- 2 pc 2 medium tomatoes, chopped
- 1 cup 1 cup kalabasa (squash), cubed
- 1 cup 1 cup sitaw (string beans), cut into 2-inch pieces
- 1 bunch 1 bundle kangkong (water spinach), leaves and stems separated
- 1 pc 1 small ampalaya (bitter gourd), sliced (optional)
- 2 tbsp 2 tbsp bagoong isda or fish sauce (patis)
- 150 g 150g grilled fish or fried fish, flaked (optional)
- 3 pinch salt and pepper to taste
- 0.5 tsp Pepper, to taste
Instructions
- In a pot, bring water to a boil with onion and tomatoes, simmering for 5 minutes to build flavor.
- Add the kamote and squash first, since they take longest, and simmer for 8-10 minutes until nearly tender.
- Add the sitaw and ampalaya (if using), and cook for another 5 minutes.
- Season with bagoong isda or fish sauce.
- Add the flaked fish if using, and let it simmer gently for 2-3 minutes to absorb flavor.
- Add the kangkong stems first and cook for 1 minute, then add the leaves last and simmer briefly for 30 seconds to 1 minute until just wilted.
- Adjust seasoning with salt and pepper as needed.
- Serve hot immediately with steamed rice.
