  1. Boil mung beans in 4 cups water over medium heat for 25-30 minutes until soft and starting to burst, adding more water as needed. Set aside.
  2. In a separate pot, heat oil and sauté garlic, onion, and tomatoes until softened.
  3. Add the pork and cook until browned, about 5-7 minutes.
  4. Add the cooked mung beans along with their cooking liquid to the pot, and season with fish sauce.
  5. Simmer for 10-15 minutes, mashing some of the beans against the pot to thicken the stew.
  6. Add more water if the stew is too thick, and adjust seasoning with salt and pepper.
  7. Stir in the malunggay leaves or spinach and cook for 2-3 minutes until wilted.
  8. Ladle into bowls, top with tinapa flakes or chicharon if desired, and serve hot with rice.
