🍗 Roasted/Baked Chicken (Whole)

Ingredients
- 1.65 kg 1 whole chicken (1.5-1.8 kg)
- 4 tbsp Butter, softened
- 4 cloves Garlic, minced
- 1 tbsp Calamansi or lemon juice
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 1 tsp Paprika
- 1 pc Onion, quartered
- 1 pc Lemon or 4-5 calamansi, halved
- 2 stalks Lemongrass, bruised (optional, for stuffing)
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 2 tbsp Cooking oil
Instructions
- Pat the whole chicken dry with paper towels, inside and out.
- In a bowl, combine softened butter, garlic, calamansi juice, oregano, thyme, paprika, salt, and pepper to make a herb butter.
- Rub the herb butter generously all over the chicken, including under the skin of the breast for deeper flavor.
- Season the cavity with salt and pepper, then stuff with quartered onion, lemon halves, and lemongrass.
- Truss the chicken legs together with kitchen twine and tuck the wings under the body.
- Preheat oven to 200°C (400°F). Place chicken breast-side up on a roasting rack and drizzle with cooking oil.
- Roast for 60-75 minutes, basting with pan juices every 20 minutes, until the skin is golden brown and internal temperature reaches 75°C (165°F) at the thickest part.
- Let the chicken rest for 10-15 minutes before carving.
- Carve and serve hot with the pan drippings or gravy.
