Ingredients
- 1 kg Chicken, cut into serving pieces
- 0.5 cup Soy sauce
- 0.25 cup White vinegar (Filipino cane vinegar)
- 10 cloves 1 head garlic, crushed
- 1 pc Bay leaf (dahon ng laurel)
- 1 tsp Whole peppercorns, slightly crushed
- 2 tbsp Cooking oil
- 1 tsp Brown sugar (optional)
- 3 pinch Salt to taste
Instructions
- In a bowl, combine chicken, soy sauce, garlic, bay leaf, and peppercorns. Marinate for at least 30 minutes, or up to overnight in the fridge.
- Remove chicken from the marinade, reserving the liquid.
- Heat oil in a pot over medium-high heat and sear chicken pieces until lightly browned on all sides. Set aside.
- In the same pot, pour in the reserved marinade and water. Bring to a boil.
- Return chicken to the pot, add vinegar, and bring back to a boil without stirring for 3-5 minutes to let the vinegar mellow.
- Lower heat, cover, and simmer for 25-30 minutes until chicken is tender.
- Uncover and continue simmering until sauce reduces and thickens slightly. Stir in sugar and adjust salt to taste.
- Serve hot with steamed white rice.
