Ingredients
- 1 kg 8-10 pieces medium squid (about 1 kg), cleaned with body tubes kept whole
- 0.25 kg 250g ground pork
- 0.2 kg 200g shrimp, peeled and minced
- 1 pc Medium carrot, finely diced
- 1 pc Medium onion, minced
- 4 cloves Garlic, minced
- 2 pc Pieces raw eggs
- 0.25 cup Bread crumbs
- 3 tbsp Soy sauce
- 1 tbsp Calamansi juice
- 2 tbsp 3 tbsp cooking oil, for pan-frying
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Clean the squid by pulling out the head and innards from the body tube, keeping the tube intact; reserve tentacles and chop them finely.
- Rinse the squid tubes and pat dry, then season the inside lightly with soy sauce and calamansi juice.
- In a bowl, mix ground pork, minced shrimp, chopped tentacles, carrot, onion, garlic, egg, and bread crumbs. Season with salt and pepper.
- Stuff each squid tube about three-quarters full with the filling (leave room as it will expand slightly during cooking), then secure the opening with a toothpick.
- Heat oil in a pan over medium heat and pan-fry the stuffed squid on all sides for 3-4 minutes each until lightly browned.
- Lower the heat, cover, and cook for another 10-15 minutes, turning occasionally, until the squid is tender and the filling is cooked through.
- Remove toothpicks, slice into rounds if desired.
- Serve with the pan sauce or a side of soy-calamansi dip.
