Ingredients
- 1 kg Medium shrimp, whole, trimmed
- 0.25 cup Soy sauce
- 0.25 cup Vinegar
- 6 cloves Garlic, crushed and minced
- 1 pc Bay leaf
- 1 tsp Whole peppercorns
- 1 tbsp Cooking oil
- 1 tsp Sugar (optional)
Instructions
- Rinse the shrimp and trim the antennae and legs if desired, keeping shells on for flavor.
- In a pan, heat oil and sauté half the garlic until fragrant.
- Add the shrimp and cook briefly for 1-2 minutes over high heat until they start to change color.
- Pour in soy sauce, vinegar, water, remaining garlic, bay leaf, and peppercorns. Let it come to a boil without stirring for 2 minutes.
- Lower heat and simmer for 5-7 minutes until the shrimp are fully cooked and the sauce has slightly reduced.
- Season with sugar if using, and adjust with more soy sauce or vinegar to taste.
- Continue simmering until the sauce thickens slightly and coats the shrimp.
- Turn off heat and serve hot with steamed rice.
