Ingredients
- 1 kg Whole medium squid, cleaned with ink sacs removed (tubes and tentacles kept intact)
- 3 tbsp Cooking oil
- 1 tsp Salt
- 1 tsp Ground black pepper
- 4 tbsp Soy sauce (for dipping sauce)
- 3 tbsp Calamansi juice (for dipping sauce)
- 2.5 pc Pieces red chili, chopped (for dipping sauce)
- 1 pc Small onion, chopped (for dipping sauce)
Instructions
- Clean the squid thoroughly, removing the innards, ink sac, and cartilage, while keeping the body tube whole; rinse well and pat dry.
- Rub the squid all over with oil, salt, and pepper.
- Preheat a grill to medium-high heat.
- Grill the squid for 2-3 minutes per side, being careful not to overcook, as squid becomes rubbery quickly; the flesh should turn opaque white with slight char marks.
- While grilling, prepare the dipping sauce by combining soy sauce, calamansi juice, chopped chili, and onion in a small bowl.
- Remove the squid from the grill once cooked through, and let rest for 2 minutes.
- Slice the squid body into rings if desired, or serve whole with tentacles.
- Serve hot with the soy-calamansi dipping sauce on the side.
