Ingredients
- 2 whole 2 pieces whole bangus (milkfish), butterflied and cleaned
- 0.5 cup Soy sauce
- 0.25 cup Calamansi juice
- 4 cloves Garlic, minced
- 1 tsp Ground black pepper
- 1 pc Medium onion, sliced (for stuffing)
- 2 pc Medium tomatoes, sliced (for stuffing)
- 2 tbsp 1 tbsp cooking oil, for basting
Instructions
- Clean and butterfly the bangus, removing the gills and innards while keeping the fish intact.
- In a bowl, combine soy sauce, calamansi juice, garlic, and pepper to make the marinade.
- Marinate the fish in this mixture for at least 30 minutes to 1 hour in the refrigerator, turning occasionally.
- Stuff the cavity of each fish with sliced onions and tomatoes.
- Wrap the fish in banana leaf or aluminum foil, or leave it open for direct grilling, then brush with oil.
- Grill over medium-hot charcoal for 8-10 minutes per side, basting occasionally with the remaining marinade, until the skin is slightly charred and the flesh is opaque and flaky.
- Remove from grill and let rest for a few minutes.
- Serve hot with steamed rice and a dipping sauce of soy sauce, calamansi, and chili.
