🍯 Pork Humba

Ingredients
- 1 kg Pork belly, cubed
- 0.5 cup Soy sauce
- 0.25 cup Vinegar
- 0.5 cup Brown sugar
- 6 cloves Garlic, crushed
- 1 pc Onion, sliced
- 3 pcs Dried banana blossoms (bulaklak ng saging), softened, or 1 cup canned banana blossoms
- 0.5 cup Black beans (tausi), rinsed
- 3 pcs Star anise
- 2 pc Bay leaves
- 1 tsp Whole peppercorns
- 2 tbsp Cooking oil
- 0.25 cup Dried salted black beans (tausi), optional if not already added
Instructions
- Marinate pork cubes in soy sauce, vinegar, garlic, peppercorns, and bay leaves for at least 30 minutes.
- Heat oil in a pot and sauté onion until fragrant.
- Add the marinated pork (reserving the marinade) and sear until lightly browned.
- Pour in the reserved marinade, water, and star anise. Bring to a boil, then lower heat, cover, and simmer for 45 minutes.
- Add brown sugar and black beans (tausi), stir well, and continue simmering for 20-30 minutes until pork is very tender and sauce thickens.
- Add the banana blossoms and simmer for another 10 minutes until softened and infused with sauce.
- Adjust sweetness and saltiness to taste with more sugar or soy sauce.
- Serve hot with steamed rice.
