Ingredients
- 1 kg Pork shoulder or pork belly, cubed
- 3 tbsp Cooking oil
- 6 cloves Garlic, minced
- 1 pc Onion, chopped
- 0.5 cup Soy sauce
- 0.25 cup Brown sugar
- 2 tbsp Oyster sauce
- 2 pcs Star anise
- 2 pc Bay leaves
- 1 tsp Ground black pepper
- 2 tbsp Cornstarch mixed with 3 tbsp water (slurry, optional for thicker sauce)
Instructions
- Heat oil in a pot and sauté garlic and onion until fragrant.
- Add the pork cubes and sear until lightly browned on all sides.
- Pour in soy sauce, brown sugar, oyster sauce, water, star anise, bay leaves, and pepper. Stir to combine.
- Bring to a boil, then lower heat, cover, and simmer for 45-60 minutes until pork is very tender and the sauce has reduced and thickened.
- If a thicker sauce is desired, stir in the cornstarch slurry and simmer for another 2-3 minutes.
- Adjust seasoning with more soy sauce or sugar to taste.
- Serve hot with steamed rice, or shred/chop the meat and use as filling for siopao buns.
