🍲 Pork Pochero

Ingredients
- 1 kg Pork belly or pork hock, cubed
- 1 pc Onion, chopped
- 4 cloves Garlic, minced
- 2 pc Medium tomatoes, chopped
- 0.5 cup Tomato sauce
- 3 pcs Saba banana (ripe plantain), sliced diagonally and fried
- 4 pcs Chinese sausage (chorizo bilbao), sliced
- 2 pc Medium potatoes, quartered
- 1 pc Small cabbage, quartered
- 1 cup String beans, cut into 2-inch lengths
- 0.25 cup Fried garbanzos (chickpeas), drained
- 2 tbsp Fish sauce
- 3 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a large pot and sauté garlic and onion until fragrant.
- Add pork and cook until lightly browned on all sides.
- Add tomatoes and cook until softened, then stir in tomato sauce.
- Pour in water, bring to a boil, then lower heat, cover, and simmer for 45-60 minutes until pork is tender.
- Add sausage and potatoes, and simmer for 10 minutes.
- Add garbanzos and fried saba banana, and simmer for 5 minutes.
- Add cabbage and string beans, and cook for another 5 minutes until vegetables are tender-crisp.
- Season with fish sauce, salt, and pepper to taste. Serve hot with steamed rice.
