Ingredients
- 2 dozen Fresh talaba (oysters), in the shell
- 6 tbsp Butter, softened
- 6 cloves Garlic, minced
- 0.5 cup Grated cheese (quickmelt or parmesan, optional)
- 2 tbsp Chopped parsley
- 1 tbsp Calamansi juice
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Scrub the oyster shells clean under running water to remove sand and debris.
- Preheat a charcoal grill to medium-high heat.
- In a small bowl, mix softened butter, minced garlic, parsley, calamansi juice, salt, and pepper to make the garlic butter.
- Place the oysters directly on the grill, flat side up, and grill for 3-5 minutes until the shells begin to open.
- Carefully open the shells fully (discard any that do not open) and loosen the oyster meat from the shell using a small knife, keeping it in the deeper half-shell.
- Top each oyster with a spoonful of the garlic butter mixture, and cheese if using.
- Return to the grill for another 2-3 minutes until the butter melts and bubbles and the cheese (if used) is melted and slightly browned.
- Remove from the grill and serve immediately, hot, with chili-soy dipping sauce and calamansi wedges.
