Ingredients
- 0.5 kg 500g fish fillets (galunggong or tilapia) or 500g shrimp, cleaned
- 0.5 cup All-purpose flour, for dredging (if using fish)
- 3 tbsp Cooking oil
- 4 cloves Garlic, minced
- 1 pc Medium onion, chopped
- 3 pc Medium tomatoes, chopped
- 2 tbsp Fish sauce
- 3 pc Pieces eggs, beaten
- 1 cup Green peas or chopped string beans (optional)
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Season the fish or shrimp with salt and pepper. If using fish, dredge lightly in flour.
- Heat oil in a pan and fry the fish or shrimp until just cooked and lightly golden. Set aside.
- In the same pan, sauté garlic and onion until fragrant, then add tomatoes and cook until softened and mushy.
- Pour in water or fish stock and bring to a simmer, mashing the tomatoes further to form a light sauce.
- Season with fish sauce, salt, and pepper, and add peas or string beans if using, simmering for 3-4 minutes.
- Return the fried fish or shrimp to the pan and simmer for 2-3 minutes to absorb the sauce.
- Slowly drizzle in the beaten eggs while gently stirring, allowing them to cook into soft curds within the sauce.
- Turn off heat once eggs are just set, and serve hot with rice.
