Ingredients
- 4 pcs Boneless chicken breast, butterflied and pounded thin
- 1 cup All-purpose flour
- 2 pc Eggs, beaten
- 1 cup Breadcrumbs
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 2 tbsp Cooking oil, for frying
- 2 tbsp Butter
- 1 pc Small onion, minced
- 1 cup Mushrooms, sliced
- 2 tbsp Flour (for gravy)
- 0.25 cup Evaporated milk (optional)
Instructions
- Season chicken breasts with salt and pepper.
- Dredge each piece in flour, dip in beaten egg, then coat with breadcrumbs, pressing to adhere.
- Heat oil in a pan and fry chicken cutlets for 4-5 minutes per side until golden brown and cooked through; drain on paper towels.
- For the gravy, melt butter in a saucepan and sauté onion and mushrooms until softened.
- Sprinkle in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth, stirring until smooth, and simmer until the gravy thickens.
- Stir in evaporated milk if using, and season with salt and pepper.
- Plate the fried chicken fillets and ladle the mushroom gravy on top or serve on the side.
