Ingredients
- 2 pc 2 large green (unripe) mangoes, julienned or sliced thin
- 2 pc 2 medium tomatoes, diced
- 1 pc 1 small red onion, thinly sliced
- 3 tbsp 3 tbsp bagoong alamang (sautéed shrimp paste), or to taste
- 1 tbsp 1 tbsp vinegar (optional, if bagoong is not sautéed)
- 1 tsp 1 tsp sugar (optional, to balance)
- 1 pc 1 small chili (siling labuyo), sliced (optional)
Instructions
- Peel the green mangoes and julienne or thinly slice the flesh into strips.
- Place the mango strips in a bowl of cold water for 10 minutes to keep them crisp, then drain well.
- In a large mixing bowl, combine the mango, diced tomatoes, and sliced onion.
- If using raw bagoong, sauté it briefly in a little oil until fragrant and slightly caramelized, then let it cool.
- Add the bagoong to the mango mixture along with sugar and chili, if using, and toss gently to combine.
- Taste and adjust seasoning with more bagoong or a splash of vinegar for extra tang.
- Arrange on a serving plate and serve immediately as a refreshing side to fried or grilled dishes.
