  1. Place shredded papaya in a colander, sprinkle with 2 tbsp salt, toss well, and let sit for 1 hour to draw out excess water and bitterness.
  2. Rinse the papaya thoroughly under cold water and squeeze firmly with your hands or a clean cloth to remove as much liquid as possible.
  3. In a large bowl, combine the squeezed papaya with carrots, bell pepper, ginger, raisins, garlic, onion, and peppercorns.
  4. In a saucepan, bring vinegar, sugar, and 1 tbsp salt to a boil, stirring until the sugar fully dissolves; remove from heat and let cool slightly.
  5. Pour the warm vinegar mixture over the vegetables and toss well to combine and coat everything evenly.
  6. Pack the mixture tightly into sterilized glass jars, making sure the liquid covers the vegetables completely.
  7. Seal the jars and refrigerate for at least 2-3 days before serving to allow the flavors to meld; keeps refrigerated for several weeks.
  8. Serve chilled or at room temperature as a tangy-sweet side to grilled or fried dishes.
