  1. In a large pot, combine pork leg, water, garlic, onions, bay leaves, peppercorns, and salt. Bring to a boil, skimming off scum.
  2. Lower heat and simmer, covered, for 1.5-2 hours until pork is very tender but still holding its shape.
  3. Remove pork leg from the pot, brush with soy sauce, and let it cool completely, then refrigerate uncovered for at least 1 hour to dry the skin.
  4. Heat plenty of oil in a large, deep pot to 350°F (175°C).
  5. Carefully lower the pork leg into the hot oil (use a splatter guard) and deep-fry, basting hot oil over the top and turning occasionally, for 15-20 minutes until deep golden and crispy all over.
  6. Remove and drain on a wire rack for 5-10 minutes before chopping.
  7. Chop into serving pieces and serve with spiced vinegar or soy-calamansi dipping sauce.
