Ingredients
- 1.35 kg 1 whole pork leg (pata), about 1.2-1.5 kg
- 10 cloves 1 head garlic, smashed
- 2 pc Onions, quartered
- 3 pc Bay leaves
- 1 tbsp Whole peppercorns
- 2 tbsp Salt
- 0.25 cup Soy sauce
- 2 cup Cooking oil for deep frying
Instructions
- In a large pot, combine pork leg, water, garlic, onions, bay leaves, peppercorns, and salt. Bring to a boil, skimming off scum.
- Lower heat and simmer, covered, for 1.5-2 hours until pork is very tender but still holding its shape.
- Remove pork leg from the pot, brush with soy sauce, and let it cool completely, then refrigerate uncovered for at least 1 hour to dry the skin.
- Heat plenty of oil in a large, deep pot to 350°F (175°C).
- Carefully lower the pork leg into the hot oil (use a splatter guard) and deep-fry, basting hot oil over the top and turning occasionally, for 15-20 minutes until deep golden and crispy all over.
- Remove and drain on a wire rack for 5-10 minutes before chopping.
- Chop into serving pieces and serve with spiced vinegar or soy-calamansi dipping sauce.
