🌶️ Chicken Halang-halang

Ingredients
- 1 kg Chicken, cut into serving pieces
- 2 tbsp Cooking oil
- 1 pc Onion, chopped
- 5 cloves Garlic, minced
- 2 thumbs Ginger, julienned
- 3 stalks Lemongrass, pounded and tied into a knot
- 2 cups Coconut milk
- 1 cup Coconut cream (kakang gata)
- 2.5 pcs Finger chili or siling labuyo, to taste
- 1 pc Chayote, cubed (or green papaya)
- 2 cups Malunggay leaves
- 2 tbsp Fish sauce
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a pot and sauté onion, garlic, and ginger until fragrant.
- Add chicken pieces and cook until lightly browned.
- Add lemongrass and coconut milk; bring to a boil, then simmer covered for 15-20 minutes.
- Add chayote and fish sauce, and simmer for 8-10 minutes until vegetables are tender.
- Pour in coconut cream and chili, and simmer uncovered for 8-10 minutes until sauce thickens and oil starts to surface.
- Add malunggay leaves and cook for 1-2 minutes more.
- Season with salt and pepper to taste, remove lemongrass stalk, and serve hot with rice.
