Ingredients
- 1 kg 1 kg beef brisket or shank, cubed
- 0.3333 cup 1/3 cup soy sauce
- 3 tbsp 3 tbsp calamansi or vinegar
- 0.25 cup 1/4 cup brown sugar
- 4 clove 4 cloves garlic, crushed
- 1 pc 1 onion, sliced
- 2 pc 2 pcs bay leaves
- 4 pc 4 pcs saba banana (ripe), peeled, halved and fried
- 1 cup 1 cup dried banana blossom or button mushrooms (optional)
- 3 tbsp 3 tbsp cooking oil
- 3 pinch Salt and pepper to taste
- 0.5 tsp Pepper, to taste
Instructions
- Marinate beef in soy sauce and calamansi juice for at least 30 minutes.
- Heat oil in a pan and fry the saba banana halves until golden. Set aside.
- In a pot, heat remaining oil and brown the marinated beef on all sides (reserve marinade). Set aside.
- Sauté garlic and onion in the same pot until fragrant.
- Return beef to the pot, add reserved marinade, water or broth, brown sugar, and bay leaves. Bring to a boil, then cover and simmer on low heat until beef is tender, about 1.5 to 2 hours.
- Continue simmering uncovered until sauce thickens and turns glossy and dark.
- Season with salt and pepper to taste, and stir in the fried saba banana just before serving to warm through.
- Serve hot with steamed rice.
