🥘 Beef Stroganoff

Ingredients
- 700 g 700 g beef sirloin or tenderloin, sliced into thin strips
- 2 tbsp 2 tbsp all-purpose flour
- 4 tbsp 4 tbsp butter
- 1 pc 1 onion, chopped
- 3 clove 3 cloves garlic, minced
- 200 g 200 g button mushrooms, sliced
- 1 tbsp 1 tbsp Worcestershire sauce
- 1 tbsp 1 tbsp Dijon or yellow mustard (optional)
- 1 cup 1 cup all-purpose cream or sour cream
- 2 tbsp 2 tbsp cooking oil
- 3 pinch Salt and pepper to taste
- 0.5 tsp Pepper, to taste
- 1 tbsp Chopped parsley for garnish
- 1 cup Cooked egg noodles or steamed rice, for serving
Instructions
- Season beef strips with salt and pepper, then dust lightly with flour, shaking off excess.
- Heat oil in a pan over high heat and sear the beef strips quickly in batches until browned but still tender, about 1 to 2 minutes per side. Set aside.
- In the same pan, melt butter and sauté onion and garlic until softened.
- Add mushrooms and cook until browned and their liquid has evaporated, about 5 minutes.
- Pour in beef broth and Worcestershire sauce, scraping up any browned bits, and simmer for 5 minutes to reduce slightly.
- Lower heat and stir in the cream and mustard, if using, mixing until smooth and heated through (do not boil).
- Return the beef and any accumulated juices to the pan, tossing to coat in the sauce and warming through for 1 to 2 minutes.
- Adjust seasoning with salt and pepper, garnish with parsley, and serve hot over egg noodles or rice.
