🥩 Beef Morcon

Ingredients
- 1 kg 1 kg beef round, sliced thinly into one large flat piece (or 6 thin slices)
- 0.25 cup 1/4 cup soy sauce
- 2 tbsp 2 tbsp calamansi juice
- 3 pc 3 pcs hard-boiled eggs, halved lengthwise
- 2 pc 2 carrots, cut into strips
- 0.25 cup 3 pcs sweet pickle relish strips or whole sweet pickles, sliced lengthwise
- 100 g 100 g cheese, cut into strips
- 4 pc 4 pcs cocktail sausages or hotdogs, halved lengthwise (optional)
- 4 clove 4 cloves garlic, minced
- 1 pc 1 onion, chopped
- 2 pc 2 tomatoes, chopped (or 1 cup tomato sauce)
- 2 pc 2 pcs bay leaves
- 3 tbsp 3 tbsp cooking oil
- 3 pinch Salt and pepper to taste
- 0.5 tsp Pepper, to taste
Instructions
- Pound beef slices to flatten and tenderize, then marinate in soy sauce and calamansi juice for at least 30 minutes.
- Lay beef flat and arrange egg halves, carrot strips, pickle, cheese, and sausage lengthwise across the center.
- Roll the beef tightly around the filling and secure with kitchen twine at 1 to 2 inch intervals.
- Heat oil in a pot and sear the beef rolls on all sides until browned. Remove and set aside.
- In the same pot, sauté garlic and onion until fragrant, then add tomatoes and cook until softened.
- Return the beef rolls to the pot, add beef broth, reserved marinade, and bay leaves. Bring to a boil, then cover and simmer on low heat until beef is fork-tender, about 1.5 to 2 hours, turning occasionally.
- Remove rolls and let rest for 5 minutes before slicing into rounds; simmer the sauce further to reduce and thicken if needed, then season with salt and pepper.
- Arrange sliced morcon on a platter, pour sauce over, and serve with rice.
