Ingredients
- 2 cup 2 cups rice flour
- 0.5 cup 1/2 cup all-purpose flour
- 0.75 cup 3/4 cup white sugar
- 2 tsp 2 tsp baking powder
- 3 pinch 1/4 tsp salt
- 1.75 cup 1 3/4 cups water or evaporated milk
- 1 pc 1 egg
- 1 tsp 1 tsp vanilla extract (optional)
- 1 pc Cheddar cheese slices or salted egg slices, for topping (optional)
Instructions
- In a large bowl, sift together rice flour, all-purpose flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together water (or evaporated milk), egg, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, whisking until you have a smooth, lump-free batter; let the batter rest for 15-20 minutes.
- Prepare a steamer with water and bring it to a rolling boil; line small puto molds or cupcake molds with banana leaf pieces or paper liners.
- Pour or ladle the batter into the molds, filling each about three-quarters full.
- Arrange a small piece of cheese or salted egg on top of each, if desired.
- Steam over high heat (covering the steamer lid with a cloth to prevent water dripping) for 15-20 minutes, or until a toothpick inserted comes out clean.
- Let the puto cool slightly before removing from molds; serve warm alongside dinuguan or pancit.
