  1. Boil the pork belly (or pork ears) in water until tender, about 30 to 40 minutes. Drain, let cool, and dice into small cubes.
  2. Heat oil in a pan and fry the tofu cubes until golden and crisp on all sides. Drain on paper towels and dice.
  3. In a bowl, combine the diced pork and tofu.
  4. In a separate small bowl, whisk together soy sauce, vinegar, garlic, onion, chili, pepper, and sugar to make the dip.
  5. Pour the dip over the pork and tofu, tossing gently to coat, or serve the dip on the side for dipping.
  6. Garnish with chopped spring onions and serve as a side dish or with lugaw (rice porridge).
