Ingredients
- 1 kg Chicken, cut into serving pieces
- 3 tbsp Cooking oil
- 1 thumb Ginger, sliced into strips
- 1 pc Onion, sliced
- 4 cloves Garlic, minced
- 2 tbsp Fish sauce (patis)
- 1 pc Small green papaya or chayote, sliced
- 2 cups Malunggay leaves or sili leaves (dahon ng sili)
- 1.5 pc Green chili (siling pangsigang), optional
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a pot and sauté ginger until fragrant and slightly browned.
- Add onion and garlic, sauté until soft.
- Add chicken pieces and cook until color changes and lightly browned.
- Pour in fish sauce and stir for a minute.
- Add water, bring to a boil, then simmer for 20 minutes until chicken is tender, skimming off scum as needed.
- Add papaya or chayote and green chili, simmer for 5-8 minutes until vegetables are tender.
- Add malunggay or sili leaves and cook for 1-2 minutes more.
- Season with salt and pepper to taste and serve hot as a soup with rice.
