🍲 KBL (Kadyos, Baboy, Langka)

Ingredients
- 1 kg Pork ribs or pork belly, cut into chunks
- 1 cup Dried kadyos (pigeon peas), soaked overnight, or 1 can cooked kadyos
- 2 cups Unripe jackfruit (langka), sliced into chunks
- 1 pack Tamarind soup base or 1/2 cup fresh tamarind pulp, or use batwan fruit if available
- 1 pc Onion, chopped
- 2 pc Medium tomatoes, chopped
- 3 cloves Garlic, minced
- 2 tbsp Fish sauce
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
- 1 bunch Kangkong or pechay (optional)
Instructions
- If using dried kadyos, boil the soaked pigeon peas separately in water for 45-60 minutes until tender. Drain and set aside.
- In a large pot, combine pork, water, onion, tomatoes, and garlic. Bring to a boil, skimming off scum, then simmer for 45 minutes until pork is nearly tender.
- Add the cooked kadyos and jackfruit, and continue simmering for 15-20 minutes until jackfruit is tender.
- Stir in the tamarind soup base or fresh tamarind pulp (or batwan) to achieve a sour broth, and simmer for 5 minutes.
- Season with fish sauce, salt, and pepper to taste.
- Add kangkong or pechay if using, and cook just until wilted.
- Serve hot with steamed rice.
